Today's harvest and dish was inspired by a member of the Backyard Aquaponics Forum asking what you can do with Vietnamese Mint. This is one of my favourite dishes. Spring rolls wrapped in iceberg lettuce with a leaf of Vietnamese mint.
We made these spring rolls from scratch and they contained from our garden, spring onion, coriander and of course the iceberg lettuce.
