This weekend was very busy with installing the new tank and grow beds. I have it almost complete and cant wait to finish it so we can get more planted. It was a long day in the heat and working beside the tomatoes we could smell them. Thinking about what we can do with them we decided on something very simple. We picked about 15 of the ripe ones and using 3 we made Insalata Caprese Salad.
Some basil from the garden, a Shaw River Buffalo Mozzarella ball, some good olive oil, salt and pepper and this is the result. We pan fried a salmon fillet to add to it and it was fantastic.
